Small Frito Salad w/ dressing - Frito salad

I was out of kidney beans so I used Chick peas. Recipe: Salad greens, onion, tomato, cucumber, Kidney beans (or chick peas drained/rinsed) shredded cheese, ham (not pictured), catalina dressing and frito's corn chips.

Carmetaff!!!! that looks so good, fresh, crispy, refreshing! satiating! oh man that looks scrumptious. That zucchinis slice in the front makes me want to just reach in there and grab it!

It looks very very good. I've seen recipes for this where they mix the dressing up with the Frito's and everything else and don't like it that way. I love salads, especially if someone else makes them or me. Or at least if I make them ahead of time before I'm so hungry I don't want to stand there cutting and chopping.

Whittby, That's how I usually make it at a pot luck dinner if it's done ahead of time. At home, I like to build the salad then dish out on the plates and dress w/ fritos and dressing accordingly. That way the fritos don't turn to mush. lol Thanks for looking!

Modestah, Thanks for looking! It is very fresh and satiating. I enjoy it very much. Those are actually cucumbers on there, but in the pic they do look a bit like zucchini. I can't wait til the garden yields fresh veggies, I'll have to throw some zuch's in there with the cukes :)
