anybody have signiture dishes that you always cook?

I thought it would be cool to have people post simple recipes here on this discussion. I am italian and I always like having something before I eat. a good snack that is purley italian is:
toast slices of italian bread
put on top ripe red tomatoe slices, two usually fit
then add oregano and olive oil
it is truly molto bene!

Here i want to introduce the cooking method of sour and hot soup.I have had it several times in restaurants and like it very much, so i try to cook it at home and the result is good. First, put a pot with water on the gas-burner and boil the water.During the waiting time,i will prepare many things: cut up some pieces of onion,green pepper,bamboo shoot and sausage to small cubes and put them in a bowl;put 3-4 scoops of flour into another bowl and beat an egg into it, then pour some water and mix them up. When the water boiled, pour the mixed cubes and the flour mixture into the pot, whisk until they are cooked. At last, put some salt and spices, pour some vinegar and soy and a little hot pepper oil, then churn up. Now you can enjoy the delicious soup.

A simple recipe that I have just came up with is Baked Tilapia with Butter Creole Sauce
I just take the tilapia straight out of the freezer and place it in a baking pan. Use a spoon to cover the tilapia with creole sauce. Bake 8 minutes at 375, flip and repeat above. Repeat once more. This time topping the sauce with capers.
Delicious....
