I've used lots and lots of different software over the years, so many that I will name will be older and may be hard to find. Most of them also are not free, but I will mention some that are at the of the post.
Cakewalk software is some of the very best. It is also fairly difficult to figure out, but it will do practically everything. I've used to Guitar Tracks and Sonar more than there other newer softwares.
CoolEdit Pro is great for editing.
Fruity loops is great for drum tracks.
A good basic program that is easy to use is N-track software. This is a great starting point if you are new to computer recording.
Okay here is the free software that actually really, really good. It's called Audacity. If you want something you can use now, for free this is the program to seek out.
Hope that helps.

I don't do it much anymore, but for a while I spent some time creating songs with the mac-only software GarageBand. It's a shame that it is only for macs, because the interface is intuitive and very easy to use, and you can create some great sounds with the software.
I would definitely recommend GarageBand, the only problem is that it's not free software :).

If you're looking for real-time, multi-track mixing, there's a competent freebie available called Kristal. I don't think it mixes MIDI with audio, though.
I just use Audacity and WavePad myself, but I'm no pro.

I use my iMac for music creation, and use GarageBand. GarageBand is pre-loaded on the latest macs, and can be updated automatically. I love to make simple toons, and play them over and over until I am sick of them. I export them, put them on my iPod, burn them to cds, and will someday make a series of podcasts.
