Does anyone have a recipe for Pumpkin Chocolate Chip Cookies?

I do, I do! 1 cup butter or margarine, softened 3/4 cup packed brown sugar 3/4 cup white sugar 1 egg 1 tsp vanilla extract 2 cups all purpose flour 1 cup quick cooking oats 1 tsp baking soda 1 tsp ground cinnamon 1 cup cooked or canned pumpkin 1 1/2 cups semi-sweet chocolate chips In mixing bowl, cream butter and sugars. Beat in egg and vanilla. Combine flour, oats, baking soda and cinnamon. Stir into creamed mixture alternatively with pumpkin. Fold in chocolate chips. Drop by tablespoonfuls onto greased baking sheet. Bake at 350* for 12-13 minutes or until lightly browned. One can of pumpkin is about two cups, so I usually double the recipe. I also use regular oats (not the quick ones) and I think they turn out ok. I've experimented some with substituting apple sauce for some of the butter/fat and they're just as good, so that makes them even healthier. These are a very moist cookie, not like regular chocolate chip at all. They don't really firm up. But boy, are they good!

I will have to try out ldyjarhead's recipe. Love pumpkin! I have never had it in a cookie. I bet they are great!
