When Im home from college I like to go out with my friends and family and go to this restraunt called los arcos. they literally have the best nachos ive ever had in my life. but im puzzled they dont use cheddar cheese like other restraunts they use this white cheese on top of them. its the same stuff that goes on top of chimichangas I beleive. does anybody know the name for this cheese so I can go to the market and stock up?

I think this might be Feta Cheese. It's a white, crumbly cheese, which is used in many Italian recipes. It doesn't melt, like Cheddar, and it's made from goats' milk. I hope this helps... Brightest Blessings.

I know what cheese you are talking about. In my grocery store it is in the cheese case with the other cheeses. It is round and about 2 inches thick. It is called Asadero or Queso Quesadilla cheese. It is really good and it melts great.

Queso Quesaddilla is the one you want not the Asadero cheese. The Asadero is a little bit yellow and a bit tangier.

The first time I had it was at a Mexican Place. I had to go out and find some it was so good. I think even Wal-Mart Super centers carry it.

That sounds like an addiction, lol. I may have to try that. I guess you can buy me one that way I can try it. I really do not care for much mexican food though. I do not know if you want that much cheese. If you eat to much cheese you will be consipated, lol. Nah that dish sounds pretty good though!!!
