Making kombucha

Last year I was shopping at the local health food stord and came across a health drink in the refrigerator section called kombucha. It's a pricy drink between $3.50 - $4.00 a bottle. It is made from green tea (or black tea) and is a fermented drink, beneficial by adding probiotics into your intestinal tract. I liked it, then explored it a bit and found a website where I could by the kombucha culture called a 'scoby'. Since then I've been making my own kombucha. It helped increase my energy levels a bit. It's an interesting drink, fairly inexpensive to make (just the cost of buying the tea and organic sugar and getting a kombucha culture).

I had a kombucha culture and made my own tea. It was fun to do, watching the culture multiply and you can give them to friends. This was ages ago and it's funny how it's made it's way into the supermarkets. Maybe one day I'll do it again. From wikipedia: The recorded history of this drink dates back to the Qin Dynasty in China (around 250 BC). The Chinese called it the "Immortal Health Elixir," because they believed Kombucha balanced the Middle Qi (Spleen and Stomach) and aided in digestion, allowing the body to focus on healing. But I'm sure that the Chinese ate much differently then and our diets today make it harder to get the same results.

I'm trying to eliminate processed foods from my diet and go back to all natural and organic foods. Kombucha fits right into my lifestyle. If you ever want another culture, I have quite a number of them stored.

I've been drinking it for almost a year. I've been very successful at making it and you are right...summer time is a great time of the year to make it. I've added frozen fruit juice to it before bottling it. Have you ever tried it just plain...no flavoring?
