Here is a recipe from my family cookbook (we are italian). I hope that you like it!
Rissoto with Chicken and Sun-Dried Tomatoes
6 to 8 sun-dried tomatoes
8 cups chicken stock
3 talbespoons olive oil
¼ cup finely diced onion
¾ teaspoon minced garlic
1 2/3 cups uncooked Aborio rice
1½ cup boneless, skinless cooked chicken, in bite-size pieces
½ cup grated Parnesan cheese
¾ cup Fontina sheese, cut into small cubes
Salt and pepper to taste
In a small bowl cover tomatoes with boiling water and let stand for 30 minutes until soft. Drain and julienne. Bring the stock to a simmer. In a large saucepan, heat the oil, add the onion and garlic and sauté until softened but not browned. Add the rice and coat with oil. Add the stock a ½ cup at a time until it is all absorbed, stirring the rice constantly. Adjust heat to maintain a gentle boil and cook until the rice is creamy, about 25 minutes. Season with salt and pepper and fold in the tomatoes, chicken and Parmesan. Lastly, add the Fontina cheese while the mixture is still hot.

Well you could make homemade ravioli, or manicotti..or Calzones (huge hit in this house!)..or what about Gnocchi OR Linguine or some other pasta with Pesto and a salad....OR LOL..Fettucini Alfredo (also a big hit in this house)..Hhhmm thats all I got at the moment LOL

Lasagna is the bomb! But if you have to change your dish then might I suggest trying the good 'ol traditional Pizza! Always makes my day.. :)

Well, one of our favorite meals is grilled Italian chicken. I use Italian dressing and baste my chicken in it and then grill it. You could also make a pasta salad to go with it.
my husband loves lasagna so that is usually our Italian food. However, he will eat this chicken and my girls would rather have it.
