My mother in law got me hooked on this dish. And it is really simply. Not to mention yummy. I've made it a few times. Mexican chicken bake. Hopefully you have boneless chicken if not remove the bones and cut it up. THrow it in a fry pan with a splash of olive oil. WHile that is simmering make up a box of stuffing. To the box directions. Take a jar of your favorite salsa mix in with the stuffing after it is prepared. Put it in the bottom of your bake dish.Save a little to pour on top of chicken. put chicken ontopof stuffing salsa mix. Top chicken with leftover salsa. Top that with your favorite shredded cheese. Bake about 20-25 minutes. Viola Dinner!
