Easy Peezy Lemon Squeezy

Ok, not exactly lemon, but this sure sounded good and looks very easy to do.
I was searching for quick ideas for dinner and dessert tonight (and got paid .04 for the search - see the top banner in my profile!) and came up with a cool site that gave me lots of ideas.
One was this recipe for individual pineapple upside down cakes, of sorts.
Pineapple Upside-Down Biscuits recipe
1 stick (1/2 cup) butter
1 cup brown sugar
1 (16 ounce) can crushed pineapple
Maraschino cherries
Medium size refrigerated biscuits
Heat oven to 400 degrees F.
Allow butter to soften. Place in mixing bowl with brown sugar.
Drain crushed pineapple juices into separate bowl. Place crushed pineapple in mixing bowl with butter and brown sugar. Mix ingredients together with a fork. Place two large spoonsful of mixture into muffin pan cups. Leave some empty. Place one cherry in the middle of each mixture-filled cup. Top each with one biscuit. Brush leftover pineapple juice onto each biscuit. Bake for 10 minutes. Use a fork to remove from pan and serve fruit side up.
I don't think I have any maraschino cherries, but I think it would be fine without that, so I'm going to give these a try tonight. Quick and simple, don't you think?
Sounds like something that would be on that 'semi homemade' cooking show.

They were really very good!
If I get ambitious I might try it with regular homemade buttermilk or baking powder biscuits. I'm sure it would come out more like a shortcake kind of thing.

Yummm that does sound easy and good. I love pinapple upside down cake this sounds like a very easy version for sure. The only thing I would leave out are the cherry's. Sounds also like you and hubby enjoyed them. Thanks for the good recipe.

Yes, they were great! I'm looking at them sitting on the counter this morning and they are calling my name, LOL.
I didn't have any maraschino cherries either and didn't miss them. I'm sure it was more for decorative purposes and to look like the 'real thing'.

I just pulled them out of the oven and as soon as supper settles in our tummies, my husband and I will be partaking.
