Who's celebrating Cinco de Mayo and what are you serving??/

I know it's short notice, but we really need some help. It's a great time for partying and Cinco de Mayo falls on a Monday, I believe, so we are celebrating on Saturday, Tres de Mayo ;). That way all will have Sunday to recoup. We've got all the decorations, but need some ideas for food, desserts, drinks or coffees? Who's celebrating and what are you serving?
