Many bananas in the US are not shipped in ripe or allowed to ripen naturally? They often arrive still green and are put in airtight rooms with methylene gas (a ripening agent) which ripens the banana before you buy it. However, this process removes some of the taste from the forced ripening. I prefer to buy my bananas green and let them ripen at home. They are much better than artificially ripened bananas in my opinion. How about you? Have you ever noticed that home-ripened bananas taste different than ones already ripe in the stores?

My store has many green bananas and that is how I buy them. They do ripen quickly, so don't need to buy them yellow. There are a few ripe bananas on the store shelves for people that want a banana today.

The store I buy my bananas from sell them very green. So green, in fact, that you can't even peel them sometimes. I like that because I buy a lot of bananas all at once and they will take longer to get brown than if I buy them yellow. Sometimes, though, they don't ever ripen and stay green. Most of the other stores I buy them from are a little more yellow, but are still fairly green. I would only buy a ripened banana if I knew I was going to eat them in a day or two.
