how to make cake with apple ?

My family love raw apple cake. Here the one that I have been making for years. It is a good way to get apples into the kids that don't like to eat them. Mix together 1 cup white sugar,1 ee,1/2 cup shorting,ans 1/4 warm coffee. Then add 2 cups chopped raw apples(I like to use granny smiths) 11/2 cup flour, 1 teaspoon baking soda,1 teaspoon vanilla. You can top it with 1/2 cup brown sugar, 3/4 cinnamon and 1.2 cup walnuts. Bake it in a greased 8x8 inch pan at 350 degrees about 30 min. It is also good with a cream cheese icing.
