If you're talking about the actual game i would say my favorite theme is the boss battle theme. It was a nice change of pace from the regular battle theme and more energetic and got me into the fight. As far as the movie, FF7: Advent Children goes, definitely One Winged Angel. The chorus is absolutely intense.

Definitely Aerith's (Aeris') theme. The orchestrated version of that is one of the most beautiful game musics I have ever heard.
