It is true that the bulk of the nutrition in an egg can be found in the white and not the yolk.
I can not recall ever making an omelet without the yolk though. I know my father used to use those egg beaters, which I would think was simply eggwhites with yellow food color in them. If I were to try this I would save the yolks for the dogs.
I like crab meat in an omelet with swiss cheese and spinach.

I have never tried making an omelet with just the egg whites. After reading your suggestion, and the other mylotter's comments, I might just have to try it. I don't have high cholesterol, but I like the idea of eating healthy. Furthermore, I always like to try new things out.
That crabmeat omelet idea sounds yummy, although, I'm curious, what you do with the yolks? Just throw them away?

Not all things with cholesterol are bad. My doctor actually recommends eating 3 whole eggs a week because the yolk is rich in other necessary vitamins and in moderation the cholesterol isn't an issue.
When I make scrambled eggs or omelets I use 2 egg whites and 1 whole egg and throw in some low fat cheese, diced sodium free low fat ham and maybe some diced tomatoes and green peppers. Then I eat it with 2 slices of 12 grain bread/toast.
Eggs with crab meat sounds interesting though. I may just have to try that one of these days.
