Ok, so it's not a huge group, but I fix dinner once a week for eight to ten people. Does anyone have any good, economical, and not extremely time consuming ideas for these dinners? I like to vary the meals from week to week and don't want to run out of ideas.

Coming from a large family, I learned at an early age to cook for 8 or more. I love to cook and this has transferred over to cooking for youth groups, charity events, socials etc. And I have to stay on a budget. Pasta dishes are always good. Pasta comes in so many varities now. One of my favorites to do is:
Penne Carbanora
I make a cream sauce (sometimes from scratch or sometime I cheat-- use either cream cheese, boursin cheese or one of those tubs in the deli of cheese spreads with herbs. Thin down the heated cheese with milk and add and herbs such as garlic, thyme, rosemary, whichever you like)
Right before tossing the cooked/drained pasta with the sauce, toss in a handful of cooked green peas and one or more of the following-chopped sundried tomatoes, canned artichoke heart (quartered), sauteed mushrooms.
After tossing all ingredients, sprinkle with bacon crumbles and parm cheese. Server with salad and hot bread. Always a hit around here.
Another is Flavored Waffles.
Make different waffles such as addind chocolate chips or nuts before cooking. My favorite is pecans with apple or walnuts and bananas. I serve with ham or bacon and mimosas.
I also make cornbread waffles and make a chicken pot pie type filling and pour over the cornbread. This is also a big hit here.
I hope this helps you some. Let me know and I can give you more ideas.

We cook for 8-10 most every night of the week LOL
As for suggestions, not sure I really can help much.
Our family loves spaghetti. I always serve garlic bread and salad with it.
I also make a lot of casseroles. They are all the same...cooked pasta, cheese sauce, and a meat. Topped with more cheese. I change the meat often. I also sometimes add a veggie in too. They all love that no matter what I put in it.
