Men - want what they can't have??

So my query is - is this true that men want what they can't have? Do they just go after the chase, and then lose interest once it's in their sights - or once they have it? Ive been thinking about this recently because Ive just started dating again and I'm a very anxious person by nature. I want to be sure that this guy I like, and who likes me, will not lose interest if I make myself too available. To be honest there aren't really any signs that he will - it's just my paranoia!! How about you? Had experiences of this? Or are you guilty of it yourself? Please tell...
