Good Artichoke Recipes?

I am planning to make artichokes with supper tonight, and have been looking for some good recipes using artichokes. So far all I have been able to come up with is the usual way - boiled and served with lemon butter. They are good that way, but I was looking for something different. Any suggestions?

Morning! I don't know the reciepe but have had then in a dip with spinich which was great, Also a friend made some stuffed, which was also really good. However never got the reciepes as I said! Good Luck! tdemex

Thanks for the ideas. They would probably be a good addition to a dip! I will see what I can come up with.

I love to stuff mine with a simple dressing of sauted onions, mushrooms, butter and seasoned bread crumbs. You take the stuffing and carefully stuff behind each leaf then steam the artichoke. They are yummy.

That does sound good! I hadn't thought about doing that. I just might try it - minus the mushrooms as I like them but am allergic!
