Olive oil is a really fragrant oil to use especially on salads.
And you may have noticed that there are many grades of Olive oil on the shelfs of the supermarket near you.
There is the normal one, the virgin ones and the extra virgin ones.
Did you ever wonder how in the world can oil be virgin?
How do they define how some Olive Oils can be virgin and how some are not?
Well, I found this out during our honey moon recently.
The acidity in the Olive oil is the thing that defines the grade it gets. The lesser the acidity, the more virgin the Olive Oil.
Interesting, isn't it?

yes. that's right. & the reason why the acidity content for some olive oils are higher than the others is because of the age of the olive where the oil was extracted from. the older the fruit, the higher the acidity. that's why it's also called virgin oil. the oil was extracted from a young olive fruit. ;)

What does the acid do for the Olive oil? I mean what is the sense? By the way thanks for the knowledge since I really like using Olive oil especially in cooking. I am also using that for the salad as dressing. And now I have this organize lettuces I could make a dressing that contains olive oil.
