How do you make your chicken salad.?

I love chicken salad but I was getting bored with it so I decided to try putting a twist on it. I had run out of celery the night before so I chopped the season chicken that I made the night before in the blender on chop and then I added mayo and EVOO and some pickle and celery salt and then some mustard powder and then mrs. dashes tomatoe basily seasoning to add a summer taste. Yum... So that was lunch for today and I still have some left over for later.
So what is your variation?

When I have a vacation and time without the kids I'll be more than happy to come and cook for you guys. LOL!!!!

yep things never do really change.. LOL!! I guess that would be the two yrs I spent in school training to be a chef and then not pursuing it at all. LOL!!!!

I don't know if this is exactly different but I add red peppers and garlic powder, some seasoning salt as well. I just put whatever it is that I have in the house by way of veggies in it. Green onions to instead of the regular ones. Nothing to exciting in my chicken salad.

I guess that it's the gourmet in me that I want to add all kinds of things. LOL!! I hate that I make everything more complicated. LOL!!!

I used to make loads of it for a 5 star restaurant I used to work at. I used real mayo, chopped celery, whole raisins, fresh chopped cilantro and mint and toasted almonds. It was the best I have ever had and now I want some.

My chicken salad isn't so elaborate as yours...your version really does sound great though..I just usually chop up the chicken add mayo, chopped onions and celery, parsley, and pepper. Last night I did the really wise thing and made all homemade salads...chicken, macaroni, tuna.....so had a salad dinner last night...plan to have it again tonight....and thank goodness I don't have to cook!!! It's 97 degrees here where I am...yuk...perfect salad weather

I know the weather here is making it like I don't want to see the stove at all and I just want to run away from food. I have been using the microwave a little more than usual. LOL!!!!

I like to mix whole egg mayonaise, a little red onion, some pine nuts with a little salt and pepper and what ever fresh herbs I have in the house - yum!

I don't really alter my salads at all. They always contain: lettuce, chicken, cheese. I don't add anything else like dressing because the reason I eat salad is to save calories and I find the extra toppings unnecessary.
