Does anyone have a recipe for a really great vegetarian casserole?

My son, the vegetarian, is coming to visit this weekend, and I don't know what to feed him. Please share your awesome recipes with me so that I can make my baby happy.

omlette omit any meat and lots of cheeeeeese, can live without meat but not cheeesssseeee!!!!
