Most people are afraid to use pork like you would beef or chicken. Try this one:
Pork Cacciatore
Quick brown the chops in oil
Place chops flat in a baking pan
Mix large canned tomatoes (chopped), 1 cup chopped onion, 1 tsp thyme, 1 cup chopped carrots and mushrooms if you want.
Pour over shops
Bake in 400 degree oven for 1 hour.
Serve with rice, potatoes, noodles, polenta, etc.

Hi bombshell :)
I make a very simple recipe with pork chops that my family and friends really enjoy. Take four pork chops, bone-in, and place them in a baking dish (I use 9x13). In a mixing bowl, put 3 Tablespoons of soy sauce, 3 Tablespoons of ketchup, and 2 teaspoons of honey. Mix together and then pour over the chops. I also like to add minced garlic, but that's up to you. Make sure the chops are covered with the sauce and then cover the whole baking dish with foil. Bake at 350 degrees for 45 minutes. Uncover and bake for another 5 minutes. The pork chops are moist and flavorful! I serve these with wild rice or brown rice, a fresh salad topped with vegetables, and steamed broccoli. It's always a big hit.
Hope you like it! :)
Best wishes...

Have you ever considered brining your pork chops? Back before refrigeration, people used to brine their meat to keep it from spoiling. It also helps produce a much juicier piece of meat once it is cooked. My father likes to use this method from time to time and that is how I learned about it.
Here is a recipe that you can try:
Molasses Brined Pork Chops
Recipe courtesy Mark Reichle and Nancy Miller
Show: BBQ with Bobby Flay
Episode: Smoldering Sweets
source: http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_28040,00.html
Brine:
2 quarts water
1/2 cup kosher salt
1/2 cup molasses
1 teaspoon whole peppercorns
1 bunch fresh thyme, or 1 teaspoon dried thyme
4 pork chops (with bone)
Make brine: Combine ingredients in a large non-reactive pan. Stir until salt and molasses are dissolved. Add chops to brine and refrigerate for 4 to 6 hours.
Preheat a grill to medium.
Remove chops from brine and pat dry. Place chops on grill and cook on each side for 10 to 15 minutes, depending on thickness; the internal temperature of the pork chops should measure 145 degrees F when measured with an instant-read thermometer. Serve immediately.

There is a recipe on the can of Campbell mushroom soup that is good with pork chops. I used to make this dish a long time ago and will have to do again soon. I used the golden mushroom soup instead of the regular mushroom soup. I thought it was much better. Actually that same recipe may be on the can of Campbell Golden mushroom soup as well.
Another way to have pork chops is to stuff them with dressing or something. I see these in the meat counter at the supermarket all the time. We have not had them like this for a long time.

How about Cajun Pork Chops?
INGREDIENTS
* 1/4 cup all-purpose flour
* 1 tablespoon paprika
* 1 teaspoon ground sage
* 1 teaspoon Creole seasoning
* 1/2 teaspoon cayenne pepper
* 1/2 teaspoon black pepper
* 1/2 teaspoon garlic powder
* 4 (1/2 inch thick) boneless pork chops
* 2 teaspoons olive oil
DIRECTIONS
1. Place flour, paprika, sage, Creole seasoning, cayenne pepper, black pepper, and garlic powder in a large, resealable plastic bag. Place pork chops in the bag, seal, and shake to coat chops.
2. In a large skillet, heat oil over high heat for about 1 minute. Arrange chops in pan, and reduce heat to medium. Cook until pork chops are dark brown, about 6 to 8 minutes per side.
