Quick and easy chicken dinner!

To make a simple, but delicious dinner for a small family, wrap four chicken thighs in aluminum foil; add baby carrots; cut up onions and potatoes, spices, and some frozen veggies. Add one tablespoon of water to mix. Then wrap tightly. Cook until done. You can bake this in your oven, grill outside or add to your George Foreman grill. It's so delicious! I get compliments everytime I make it. Add a tablespoon or two of Pico De Gallo (like salsa) to the mix and cover well, for a more exotic taste. I've only ever made this recipe on my big George Foreman grill, so I can't tell you how long you'd need to bake in your oven. On the George Foreman grill, cooking time is about thirty five to forty minutes. Just test for doneness! Would you like to share a recipe?

You betcha! Add diced veggies that you love in place of the carrots or frozen veggies. What I love about this dish is that you can customize with whatever you have in the fridge. If you don't like potatoes, then leave them out. If you prefer brocolli, add a handful of frozen brocolli! Or, cut up bell peppers. There's no wrong with this recipe. Customize to your own tastes. If I cooked the chicken in thee amounts you indicated,then it would be enough for me to eat but the others would have to have a sandwich! I admit to being a chickenaholic and love my chicken almost anyway it can be prepared(and your way DOES sound delicious).I do not do anything special with the chicken but enjoy reading other's recipes and maybe trying them myself.Thank you for sharing this with us.gotta go.....must be a chicken around here somewhere......

It's almost better the second day! You could just as easily use two chicken thighs, if you prefer and that would fit on a small grill.

That does sound delicious and easy to prepare. I've made steamed vegetables on the grill the same way. You add butter and whatever seasoning appeals to you, garlic works for me,alittle water and grill the aluminum pocket for about 10-15 minutes wa-la fresh steamed veggies.
