Interesting and different Chinese food

We've all know about the chow mein, sweet and sour pork, spring rolls, etc., but I am looking for something different and not as widely publicized, something you wouldn't find simply walking into a restaurant. I love Chinese food, and I know the stuff we get here isn't traditional Chinese food. So does anyone have any recipes for something different and new? Thanks in advance.

wow that's a tough question to answer. there must be tens of thousands of chinese dishes around. i'm chinese and eat chinese food everyday. but i reckon i've only tried less than a tenth of all chinese dishes. are there anything in particular that you like. for example sweet and sour, sour and spicy, salty roasted stuff or savoury stir fry?

hmm i like spicy food and stir fry too. have you tried any sichuan cuisine? things like gung po chicken (or pork) and mala steamboat. they are spicy food and the mala steamboat is so spicy it numbs your tongue. it's basically chicken soup with the sichuan peppercorns.

I like spicy stuff quite a lot, and stir frys as well. Really what I want is something different from the stuff you'd find at a normal Chinese restaurant.

There's a restaurant that we stop by every time we're in New York, and one of our favorite things to order is sliced tongue and tripe in hot oil. Another favorite is fatty cooking pork. It's a Sichuan restaurant, and different regions have different styles of cooking and different specialties.

I grew up in Hawaii with a lot of Chinese food. when I moved I was surprised on what they didn't have. The ones I'm going to mention are common to me, but you don't see it too often.

I am also like Chinese food, of course, the ones you mentioned is also has the charm to me. apart from that, i do like to introduce the Reganmian which is the local nosh in Hubei Province. this foods looks like the Beijing jajangmyeon, but the noodle is churn up with peanut butter and other pickles, it smells savory and tastes very good. i suggest you do better have a taste of it when you have the chance to travel in Hubei Province. you will not be disappointed in this lovely nosh.
