I have ribs in the crockpot, simmering with mesquite bbq sauce, mesquite marinade with lime juice, garlic, pepper, and onion. We'll probably broil them tonight after they've simmered all day long. I was going to boil them but I have to leave soon and I'm not insane enough to think I could leave ribs boiling on my stove while I'm out. LOL!
What's your favorite kind of dip and chips? I'll also supply homemade fresh guacamole!

I would bring potato salad
a Southern favorite
or my garlic herb mashed potatoes.
I don't cook meats too often, but
I could bring BBQ chicken.
I do a good recipe for that!

Oh man I looove garlic mashed potatoes. I made some along with new york steaks on Father's Day - well hubby grilled the steaks but I did the potatoes. I roast cloves of garlic in the oven with olive oil and blend in the roasted garlic, add salt and pepper, half and half, and butter. They are soooo good! Maybe not super good for your waistline but what's a few times a year?

Hmmm ... I was going to say coleslaw since I have an awesome recipe that tastes like KFC, but I see someone said that already.
How about a fruit salad with watermelon, cantaloupe, strawberries, grapes and oh, whatever else I can find.
Or would you prefer the ambrosia salad type, with the marshmallows in it? I have an awesome recipe for that too. In fact, it sounds good right now!

I am assuming that by quick you mean an unexpected invitation and that I have to use what I have on-hand? If so, I would have to say that due to a recent move, my fridge and pantry aren't stocked very well so I will have to use what I have. I will do some deviled eggs and cut up a cantelope. I'll also bring a few 2-liter bottles of soda. How is that? Ha!

I would bring potato salad or pasta salad. I have gone to two picnics this summer and to both of them I brought pasta
salad. I wanted to bring baked beans to one but I somehow misplaced the cans and didnt feel like making it anyway when the time came.

Well in my family I am the baker. We have BBQ every year for our family reunion in July. I am always the baker, even though I can't eat what I cook...maybe that is a good thing.
So usually here is my contribution
Sheet Cake (2) one plain white with custom frosting one chocolate with custom frosting
Cookies galore, usually 6 to 7 dozen assorted cookies the family sends their wish list from my speciality and I pick the ones I feel like making
Then I usually make a couple of salads - Asian Cabbage, Spinach
