Here is a great recipe for Baked Tomatoes I would love to share!Baked Tomatoes
4 Tomatoes
1 tbsp. diced scallions
1 tbsp. minced parsley
2 tbsp. melted butter
1 tbsp. bread crumbs
1 tbsp. sugar
1/2 tsp. salt
Cut 4 tomatoes crosswise. Place them cut side up in a buttered baking pan. Mix together remaining ingredients and spread over the tomatoes. Sprinkle with black pepper to taste. Finally top with about 1/4 cup grated parmesan cheese and bake at 375 degrees for 6-8 minutes.

Hi Schulzie,
How yummy!! These are very good and so easy to make. My husband suggested bacon bits the next time I make these. Just a sprinkle on the top with the parmaesan cheese. Bacon bits made from real bacon, not the imitation stuff. I will let you know how that works.

That sounds wonderfull schulzie. What's a scallion? (Too lazy to look it up) I know it's a type of oinioy thing but they are not something available where I a,.
Would you serve that as a snack, a light meal for 4 people on toast maybe or as a side didh? It would probably do all three.
