sweet jilebi

take two cups of maida and a half cup of sour curd in a bowl and add 1 tsp of fruit salt. Mix thoroughly and add water if necessary. Make the dough of pouring consistence. take a bottle, make small hole in the cap with a heated nail. pour the batter in the bottle.
In an other pan make sugar syrup, one string thick, ready to dip the jilebi rings.
Take a flat bottomed pan pour oil to fry the jilebis.Pour the batter from the bottle in to the heated oil, in such a way they make ring after ring fry jilebis in oil.
put the fried jilebis for 2 minutes in the sugar syrup and take out put in a serving plate.

Hi rama, you have made my mouth water. I simply love jalebis. But I thought we used a deep bottomed pan for it. Is a flat bottomed pan enough? I mean, you deep fry them, don't you?

I have never made jilebis, only eaten them. And I had always thought they used a deep-bottomed pan for it. :) But now that you have pointed it out, yeah.. I agree, the rings will come out beautifully in a flat bottomed pan. Can't wait to try this out.
