Cooking Rudbeckia...

Last week I cooked up a rudbeckia in a soup. It was really tasty and enjoyable. But a problem reared it's ugly head when that evening I began having horrible gas... Is there a secret to cooking this plant?

rutabagas belong to the cabbage family and are a bit sweeter'than turnips but do cause gas. I think they are better just cooked by themselves as a veggie like you would cook potatoes only do not cook them to a mush, and I think you will find they cause less gas that way. I know overcooked cabbage does that to me, I get really uncomfortable gas from them.the more you cook them the more likely they are to cause gas.

Should I bake it next time like I would a potatoe? Or maybe in the microwave? This was the first time I ever cooked a rutabaga. I pealed it, chopped it up into cubes, tossed it into a large pot along with the other ingredients, brought it up to a boil and then lowered the temp to a good simmer. It cooked for nearly two hours and was tender when I stuck a fork into it. It was delicious. Can they be eaten raw?
