I'm not really a good cook here, but I think there is a scientific explanation why wooden spoon are very popular with most professional chefs, but for me it's all about how they feel- it's also comfortable to use., I've heared also that the flavors becomes part of the spoon and it add to the taste. And it has also something to do with heat conduction, unlike metal spoon it doesn't transfer out heat and mess with the temperature in unpredictable ways. Another, wooden spoon keep the mixing soft and just right. Using wooden or metal spoon has almost no difference.. it all depends on the secret ingredient :) just my thought only. Thanks and have a good cooking day!

In fact here in China we have not the same tools to make western food, such as cake etc. The material and tools are not easy to be found. So sometimes I will use another similar tool. I don't use a wooden spoon. I use a soft rubber tool to stir the material softly to make the cake. I love China

I think there is something to do with using a kitchen spoon to a wooden one sue but if you do not have a wooden one a plastic spatula or anything plastic that will mix should do the trick.....by the way am heading your way soon so put the kettle on and looking forward to my FAVOURITE mudcake....and named after me! lol
