looking for quick cool meals

the weather is so hot thatt I don't want to cook, so I am looking for quick one dish meals for two. I am tired of just salads with vegs and meat. Any Ideas

What about a nice big fruit salad served with cottage cheese or sherbet or a curried chicken salad or soemthing like that? I know what you mean. I get tired of eating the same things over and over again also. With all the cookbooks I have around here you would think I could do better.

I guess you are right we should use some of those cook books that are just sittting on the shelf. The curried chicken sounds good. Tonight I'm making enchilada and putting them in the microwave to save on the heat. Thanks for the ideas

How about some nice cold smoothies? Throw some fruit and viggies in with some ice in your blender - nice quick and cold meal.

How about mexican pizza. My husband likes this and it is fast to fix... 1 1/2 Cups Bisquick 1/2 Cup Cornmeal 1/2 Cup Cold Water Heat oven to 425. Mix Bisquick, cornmeal and water until soft dough. Roll or pat dough into a 12 inch circle on an ungreased pizza pan, forming 1/2 inch rim. Bake for 10 minutes. 1 lb. Ground Beef 1 Can (4 oz) Diced Green Chilies 1 Envelope Taco Seasoning Mix 3/4 Cup Water 1 Can (16 oz) Refried Beans 1 1/2 Cups Shredded Cheddar Cheese 1 Cup Shredded Lettuce 2 Chopped Tomatoes 1/2 Cup Chopped Onions Cook ground beef, drain, add chilies, seasoning mix and 3/4 cup water. Heat to boiling. Simmer uncovered, stirring frequently until thickened about 5 to 10 minutes. Spread beans over baked crust, top with beef mixture and cheese. Bake 10 minutes longer. Top with lettuce, tomatoes and onion. Serve with taco sauce.
