Need ideas for how to cook chicken.

This week's grocery store sale was for bone-in chicken breast halves. I got a nice, big package. How should I cook it?
Usually I do chicken and dumplings with that type of chicken, cooking the chicken with onions and carrots and taking the chicken off the bone. That's typical winter comfort food, though, and it'll be in the 90s today. Occasionally I'll try to de-bone the chicken before I cook it, though I always feel that I leave too much on the bones, but I use the boneless chicken to make chicken nuggets. Sometimes I'll cook it, take the chicken off the bone and cut it or shred it for enchiladas or some other Mexican-style dish.
Nothing sounds particularly appealing to me this morning. Anyone have any suggestions about how I should prepare the chicken today?

Can't help you there because that cut is my least favorite part of the chicken. I usually buy a whole chicken and roast it in the ingrared/convection oven, or pressure cook it whole for soup, but sometimes we buy the bag of frozen cutlets from Target, as they are convenient. I made barbeque chicken last night for a change and it was really good, but usually I like the more simple dishes.
How about a nice cold chicken salad?

I like to "roast" a whole chicken in my crockpot. I rub it well all over with lemon pepper or other seasoning and it comes out great. I do like the chicken salad idea, too, and need to make that very soon. Thanks so much!

A really tasty but really simple chicken recipe is to coat the chicken with Wishbone Italian Salad dressing. Bake it in a 350 degree oven for 45 minutes. Remove it from the oven and spinkle to taste with Italian flavored bread crumbs, and parmesan cheese, then let it continue back for about 1/2 hour or until done.

Oh, now that sounds good, too. That's a pretty classic recipe, isn't it? It's the classic ones that have been around for a long time that I tend to forget about, but I'm always glad when I go back to them. Golly, I'm going to have a tough time deciding what to do today! Thanks so much for the input and the reminder of that great chicken recipe!

well since it is summer you could do chicken salad sandwhiches, bbq chicken is always a good one too. if you dont have a grill but have a crock pot you can always put chicken in the crock pot with the bbq sauce and let simmer all day. it makes it really good cause the bbq sauce gets all the way in the chicken and you arent heating the house. then you can either peal it off the bone and do like a chopped chicken sandwhich or you can leave whole and have just the chicken. in my house we eat alot of chicken cause of the price of food.

Great ideas. I hadn't really thought about bbq chicken, for some strange reason. Chicken salad is a good idea, too. I may just have to go back and get more of that chicken with chicken salad in mind, to have on hand. I do have a grill, but I have a crockpot that I use a lot and love, too. Barbecue chicken on the grill sounds very good. You've gotten my taste buds tingly. Thanks!

Do you like spicy? Try this for size... Chop up any fresh hot peppers of your choice, along with three to four cloves of garlic. Season your chicken as you would normally, sprinkle the chopped peppers and garlic on top. Cover your chicken with thin slices of tomatoes and bake as you normally would. Your chicken will come out juicy and spicy.
