Do you have any good recipes or ideas for acorn squash?

This year my husband wanted to try acorn squash in our garden. Well the squash plant is kind of taking over everything and we'll be getting some acorn squash soon to pick. He mentioned about cooking it with some cinnamon mixture, but wasn't quite sure. I'm not a big squash fan so I was wondering if any of you have an idea or a good recipe for the squash to use when it is ready to be picked from our garden. Thanks!

Butternut Squash is good anyway you fix it. I fixed some last week in the microwave. I had never done that before. I washed them and them cut them in half, removing the seeds. I then put a little pepper and salt on them and a little butter. I just placed them in a baking dish in the microwave and hit the Fresh Vegetables button (mine is automatic) and it cooked them perfectly! They are also good baked with a little butter and cinnamon on them, so your husband is right. It's all according to what you are serving them with. The ones cooked in the microwave I served with black eyed peas and tossed salad.

That's the good part about having a lots from the garden. You can try out several recipes to see what is best. I wish we had thought about planting them. Bill only planted yellow squash, cucumbers, and tomatoes. The cucumbers are running us out of house and home. But they've done it every time we've planted them. I've given away lots of them this year.

Acorn squash id my favorite kind of squash. I like to just put mine in the oven whole because they are so hard for me to cut. For me it's also easier to remove the seeds. When they collapse I take them out and cut them in half scrape out the seeds and pull the peel off,then Mash with some butter salt and pepper. My grandkids like theirs with some butter and brown sugar. I have heard of cooking them with sausage in them too. but I never tried it that way.

My children have begged me to make Acorn squash. You cut them in half, cut a little off the top and stem so they lay flat on a baking pan. After you scrape out the seeds put a tablespoon or two of brown sugar or maple syrup and a dab of butter with seasonings and bake them for about an hour until they are soft. You can bake a bunch at a time and freeze the leftovers.

I like mine sliced and rolled in cornmeal and then fried. Yummy! It is so good. I have not had it in a long time so now I am wanting it. My mother in law also boil hers and it is really good, but I like it fried better.
