Can you add any flavor to home made seitan?

Hi everybody. Last night was my first time making my own seitan. For those who doesn't know what seitan is, it's gluten food, very high in proteins and a substitute for beef, chicken etc. It actualy looks a lot like chicken.
I wonder if when making the dough i can add some flavors to the flour, such as spices and salt.
In fact it was my first time making it and the first time ever I ate seitan. I'm not a vegetarian but like to have a healthy approach to eating.

I have only made seitan once with a church group. We mixed the wholewheat flour with water until it was a bread dough consistency. we then stated washing the dough until all the wheat starch . I also have mad it from flour that has had the gluten washed out.I would think that any thing that you added to the flour would wash out as you wash the wheat starch. I think you could add seasoning and flavor if you make the seitan form vital wheat gluten, or high gluten flour. You can add seasoning when you mix the seiten.
