Whenever, I try to prepare fried noodles, my noodles get sticky and are not as we get in the hotels. Do you know why do they get sticky? Does this happen with you too? Its only noodles that I have problems with. I wonder why, I have tried half boiling the noodles to avoid the stickiness. I have also put oil in water while boiling the noodles, yet this happens when I boil the noodles. Can someone tell me the real reason behind it. How can I get noodles that are just like the ones we get in hotels. The soups and all turn out fine, but just because of this stickiness in the noodles, I just avoid making them. Someone, please help me get rid of this problem.

I have that problem sometimes with ramen noodles, but I always figured it was from boiling them too long. Try putting salt in your water, it's kind of a natural way for foods to not stick, or atleast I think. Other than that, I have no idea. I'm not the biggest fan on noodles, just because they make me feel really full and miserable :(

i agree with you, Amber. i think we also can put the boiled noodle in the cold water. In that way, noodles will not be sticky. just try it.

If You mean pan fried noodles like You get in Chinese resturants then Try this.
Starch is the problem, You need a large pot with a lot of water. Cook the noodles according to package directions but bring to a boil while stiring constantly. When the water starts to boil start Your timer and reduce the heat to a medium low. Now stir the noddles every 10 or 15 seconds until they are done. Now drain them and rinse in cold water imediately. Let drain well and put in a large bowl, toss and coat the noodles well with Your favorite oil. Now add desired amount of oil to a hot pan or Wok and fry the noodles tossing and stiring often until they are done the way You like them.
