I would do a fair amount of research in the country they're coming from. Many books prepare you for entering into a country, those same books will help you make this persons visit an enjoyable one. Many countries have very simple no-no's, and you should seek to get to know any no-no's this country has. A perfect example would be what hand you greet people with making sure it's not the hand you also wipe with. in some countries, this is a problem. We shake with our right hand. They believe people wipe with their right hand, obvious problem

I think it's best to choose a restaurant first then ask your customer if this suits his or her taste. You should also do some research about the chosen restaurant to know what's their specialty. That way, you'll be able to make your customer happy with the dishes. It will also give him or her an idea of your forward looking-ness as well as your hospitality as a host. Finally, do pay attention to table manners and customs from where your customer's from. Sometimes people from different countries have peculiarities that you ought to be aware o and respect. Happy eating!

It depends where they are from, as different countries have different customs. They will probably be more concerned about being polite and following your customs though and I wouldn't worry too much.
