How do you deal with spills and stains?

I often spill wine, sauce, and all sorts of things on my carpet. What techniques do you use to clean your messes up? I use just plain old water and cloth, but if the need arises, I will go for Oxyclean.

I usually use vinegar with brush to clean it off to remove the stain, then later have to use some air freshener spray like bayfresh or glade to remove its odor. Oxyclean, Oxybleach, anything with oxide is useful too. My cousin uses orange cleaner.
