Anyone have a Good Eggplant Recipe??

This year I tried growing a few extra egglants and they have really take off. I don't know what to do with them all!! I only have two recipes, eggplant parmesean and this noodle tomatoe thing. I've only been able to give two away...apparently, not two many people are fans of the eggplant. I love them!! So, how do you cook your eggplant???

I love marinated, grilled eggplant, eggplant parmesan, and baba ghanoush.
I slice up the eggplant, salt it, drain it, and marinate it. I tend to have a lot of eggplant, so I bag and freeze the marinated eggplant. Then, all I have to do is slap it on the grill, cook it, and put it on a sandwich. Yum!
Eggplant parm freezes well, too.

my favorite way to fix eggplant is to slice them, add salt, dip them in milk, eggs & meal & fry them. when i take them up i sprinkle them w/n cheese.
