White squash can be hard to cook depending on how ripe it is. Personally, I like it sliced fairly thin and steamed. It is also good mashed - like mashed potatoes - and my mom use to make a salad with it.

I am 99% sure she use to cook the squash just because white squash is really hard - like uncooked acorn squash.

My neighbor gave me some zucchini last year, I gutted it, mixed it with some bread crumbs and a few other veggies like onion and pepper, and boy that was really good.
You can do a search on allrecipes.com or www.recipegoldmine.com they have some really good ones.

Try this, its real tasty.
White onions, chopped and bell peppers, chopped and stir fried in peanut oil with a half teaspoon of black bean sauce.
Add any meat, chicken, shrimp or anything else and you have a whopper tasty dish.
I do it.

My first thought was to slice them up, sautee them, and curry them! Yum! I don't like squash, but I do like veggie curries with squash included. You can also make squash parmesan with them, rather than doing a chicken parmesan. That's easy, tasty, and very healthy. I also will make stuffed squash by hollowing them out, mixing the 'guts' up with cheese, other chopped veggies, spices, etc., and putting them in the oven until they're cooked through.

i love veggies. these were home grown, too !
because i love the taste of veggies, i try not to mess with them very much.
i will thickly chop them and stir fry. just some garlic, salt and pepper
so you can really taste them.
my mom often buys zuccini, stir fries it, opens a can of stewed tomatoes, heats
that with the zuccini and tops with mozzarella cheese.
i like to cook pasta and a minute before it's done boiling, i dump in tons of
grated zuccini and squash. shredded like that, it only takes a minute to cook.
drain it all together. top with a little butter and parmesean cheese.

I do not think that I have ever eaten anything filipino. Is coconut sauce hot?

It sounds to me like you have some Patty Pan Squash. My sister likes to slice them up into thin slices and sautee them in a pan on the stove top with some butter until they are brown or lightly coat them in flour and pan fry them. Then just sprinkle with salt and pepper and serve.

Hmmm. I don't like squash very much at all...so I would probably puree it and put it in my spaghetti sauce. I'd get the benefit of a veggie without have to taste it.
I love zucchini, but I also might put it in the spaghetti sauce. But as chunks.
