I find that at least here in India the packaged/bottled water is called "Mineral water" Why is that? Most water that we drink has some minerals in it!

Mineral water is not the same as the water that comes out of your faucet. It's supposedly harvested from a natural source, ie a spring or well, where it has spent a long time trickling through the earth and absorbing minerals, hence the name.

I've read a lot of articles that although they claim to be from some spring or well, a lot of companies just purify any water and claim it to be "mineral water"

It does contains minerals which are necessary to our health. Some mineral water come from the nature. If it clear and good enough, it will can be sold in bottle after simple processing. Some of mineral water are manmade from plain water. But i will prefer plain water because I believe I can get mineral enough from daily foods.

Natural water contains essential minerals and salts which are important for the body. Purification destroys these minerals. Mineral water claims to purify water as well as preserve these minerals so that our body makes up faster when exhausted.
