What Did You Have For Lunch Today?

I'm on Weight Watchers so I have to pretty much count my points carefully by measuring my food and making wise choices. Today for lunch I made myself a mini-tuna casserole. I used brown rice elbow macaroni which has no wheat or gluten in it. I had cooked it a few days earlier and just measured out the right amount for my portion. I mixed the macaroni with some flaked tuna and low-fat mayo and topped with some shredded low-fat cheese. I popped it in the microwave so all the cheese would melt. I served it with some grape tomatoes. It was truly delicious and satisfying.
What will you do for lunch today and, if you already ate, what did you have?

My lunch/late breakfast was a culinary creation that rivals the greatest cuisine on earth. It would never have been possible if not for my refrigerator.
When you open my fridge you'll find a myriad of tin foil wrappings and plastic storage containers. A leftover lovers dream. I chose some soggy chicken strips, with a side of runny, tasteless mac & cheese, a cup of raspberry yogurt for dessert and a glass of raspberry iced tea. It's alright to be envious of my meal of kings.
Oh, I don't want to forget my after meal snack of sarcasm. A real post meal breath freshener.

Fryediddy, my refrigerator would be a haven for you! We never throw out anything until it's growing penicillin. Seriously, I have several leftovers, and I think tonight I will cook peas to go with the left over macaroni salad. We also have a cantaloupe in there that is going to be eaten soon, or it's going out the door!

Leftovers are my savior. My roommates wouldn't touch leftovers if they were dying from starvation so it's a lot of free food, all for me! I need to turn the creativity up and notch and see what I can create. Lately it has been heating up and chowing down for a quick bite.

In a little while, I'm going to have grilled cheese, Pringles, and fruit (a got such nice berries at a local market). Overall, I think that's pretty healthy. I've been trying to eat healthy lately moreso, but surgery really pushed me back to eating bad comfort food, because I felt so bad... I'm better now, though, and I'm trying to return to the healthy side of things.

I've been trying to watch my weight and lose a few pounds. So, when I got hungry early awhile ago, I got out the whole grain macaroni salad I had made. I just spooned out a little and ate that in order to curb my appetite. I probably won't have anything else until dinner. And that could be late considering what time my husband gets home these days.

I also use the same macaroni I had for lunch today to make a great macaroni salad. I mix the macaroni with some low-fat sour cream and low-fat mayo as well as some hotdog relish. I chop up some different colored peppers (not the hot kind) and a small onion. I mix it all together and it comes out very tasty. No one who has eaten it has ever thought it was a Weight Watchers dish. That's why I love Weight Watchers.. so many great recipes

I got this recipe from the pastor's wife. It is sort of a hot jalapeno macaroni salad. It has macaroni, diced jalapeno for the taste (add as much as you like according to your taste), diced green bell peppers (all colors, if you like), pimentos, red onion diced, and cheddar cheese. I almost got mine a little hot. I added an extra spoon of jalapeno peppers. Next time, when I taste, I'll just go by the first taste, not add some more. But it is delicious with dried beans.

i think i have a hole in my stomach because i keep eating every two seconds. for lunch today i had some chicken and rice. but when i mean chicken, i mean half of a rotisserie chicken and a big bowl of rice. then two hours later i ate again. i do work out so i am sure my metabolism can handle it, but i dont really keep track of the gluten/carbs ect in food. im a diabetic, so i keep track of sugar content.

If you are a diabetic then gluten free good would be very good for you. Thankfully, there is more available in mainstream supermarkets. You used to have to shop for these things in health food stores. If you workout, then I'm sure you won't have a problem burning off those calories. Look at Michael Phelps..he eats over 12,000 calories a day!

hmm no offence or anything but people make it harder than it actually is to eat healthy. i just a lemon-pepper turkey sandwich with lettuce, cheese, pickles jalapanos with some honey mustard mayo. yum

Since i am a student here,i am conscious about my weight and figure but now i cant really control of my eat and my food intake because now i join a dance troupe so i just think that if i will eat plenty its nothing because i will burn those calories when i practice dancing. My food in my lunch is rice and liver.i love it soo much,so yummy.

Yesterday I had lamb and potato salad.
There's this latino place near to where I did some work and I had my lunch there.
The gravy in the lamb is really good and there's a comfortable place with tables and chairs to eat.
It was good.

For lunch today I had a tomatoe wrap with 5 slice of ham ( 45 cal for the ham.. 2 tbs of hummis with 1 cup of saled in it .. along with a 70 cal pack of rice pudding .. my total calories for lunch was 206

Hi ,
How are you today
I did not have my luch yet today !
Yesterday I had some chicken soup with my fiance , because we both are getting over the horrible cold we have .
Feeling little better today , so he will have some left over pasta .
I will have this south beach hoagie . tirkey santa fe . that is real good and a treat .
Tomorrow I am making a huge salad with feta , and nuts , and some raspberry dressing !

Oh and i did weight watchers too for 3 years and lost 120 lbs ;) it kicks butt !!!

Today's lunch is rather simple. I'm not working today, so I cooked. We had rice porridge, shrimps cooked with a sort of green beans (we call 'petai' here) in chilli sauce, broccoli in Thousand Island sauce, and another green leafy vegetable (don't know the name in English) cooked in oyster sauce.

Since I can't cook worth a hoot I had a subway veggie delight sandwhich piled high with veggies it was heaven I eat 5 of those a week.

i am on a diet too, i am allowed to eat only lunch while drink the special beverage for brakfast and dinner ...
today i had "fried kway teow" this is chinese fried flat rice noodle ... it is very tasty and delicious, i love it ...
