Do you dehydrate?

I've responded to a couple of discussions and have mentioned food dehydrators. I was a bit shocked that so few people seem to take advantage of these terrific machines, and was curious to see how many people are out there hiding that use their food dehydrators.
I haven't been up to canning this season, so I've spent a lot of time dehydrating tomatoes. I've also dried a lot of herbs for this winter, catnip for the kitty, peppers, strawberries, blueberries, and bananas. I cook with them and my guy steals dried veggies as potato chips.

We don't have one, I doubt were will ever buy one. The machines you buy don't really dry out the food by just removing the moisture, it also heats and essentially cooks the food - as if you left it out in the dessert - so you end up with a different taste and texture than if you actually dehydrated the food.

Mine's a cheapie one that lacks a heating element and just does high volume circulation, so we don't have the cooking issue. Interestingly enough, my mom's more expensive one with the heating element turns out the same results as ours does!
