i slice them, salt them, put in a mixture of egg & milk then batter them w/corm meal & fry them. when i'm taking them up i sprinkle parmesan cheese n them. they are real good & simple to fix. hope u try them. greetings from tennessee.

Oh yeah thats good egg plant like that and if you dnt have time to grill on a grill you can fry in a pan or just microwave it :)

I love egg plant parmesian very simple to make
Here is a recipe i got off recipe.com
1 eggplant, cut into 3/4 inch slices
1 1/2 tablespoons salt
8 tablespoons olive oil
8 ounces ricotta cheese
6 ounces shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg, beaten
1/2 cup chopped fresh basil
4 cups pasta sauce

DIRECTIONS
Sprinkle both sides of the eggplant slices with salt. Place slices in a colander, and place a dish underneath the colander to capture liquid that will sweat out of the eggplant. Allow to sit for 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, mix the ricotta, mozzarella cheese and 1/4 cup Parmesan cheese. Mix in egg and basil.
Rinse the eggplant in cold water until all salt is removed. In a large skillet, heat 4 tablespoons olive oil over medium heat. Place one layer of eggplant in the pan, brown each side. Repeat with remaining eggplant slices, using additional oil if necessary.
In a 9x13 inch baking dish, evenly spread 1 1/2 cups of spaghetti sauce. Arrange a single layer of eggplant slices on top of the sauce. Top the eggplant with 1/2 of the cheese mixture. Repeat layering process until all the eggplant and cheese mixture is used. Pour remaining sauce on top of layers, and sprinkle with remaining Parmesan cheese.
Bake 30 to 45 minutes in the preheated oven, until sauce is bubbly.

oh yeah if you like lasagna try adding eggplant pieces to your recipe thats wonderful
1 (16 ounce) package lasagna noodles
4 cups ricotta cheese
1/4 cup grated Parmesan cheese
4 eggs
salt and pepper to taste
1 teaspoon olive oil
3 cloves garlic, minced
1 jar spaghetti sauce
1 teaspoon Italian seasoning
2 cups shredded mozzarella cheese
DIRECTIONS
Preheat oven to 350 degrees. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and lay lasagna flat on foil to cool.
In a medium bowl, combine ricotta, Parmesan, eggs, salt and pepper; mix well.
In a medium saucepan, heat oil over medium heat and saute garlic for 2 minutes; stir in spaghetti sauce and Italian seasoning. Heat sauce until warmed through, stirring occasionally, 2 to 5 minutes.
Spread 1/2 cup of sauce in the bottom of a 9x13 baking dish. Cover with a layer of noodles. Spread half the ricotta mixture over noodles; top with another noodle layer. Pour 1 1/2 cups of sauce over noodles, and spread the remaining ricotta over the sauce. Top with remaining noodles and sauce and sprinkle mozzarella over all. Cover with greased foil.
Bake about 45 minutes

Might not be bad cooked up in some olive oil (don't make it too too soft) and then take the slices, sprinkle some cheese on them (grated cheddar perhaps) lay them on a cookie sheet, and do them in the oven until the cheese melts. My mother does that with potatoes, so i don't know why it wouldn't work with eggplant too.

slice a large one in half, hollow out all the meat of the egg plant, mix with minced prawns. fill the egg plant with this then cover with grated cheese and grill

It's not my favorite but I mix it with beef sometimes. I will either stew or fry them, it acts and tastes almost like tofu when it's mixed like that.

I know what you mean about the great suggestions here. I love it. How long did it take for your egg plants to grow? I'm just harvesting my potatoes and it took quite a few months. But it was worth it.

I actually planted most of my garden a bit early for our area, Southern Michigan, in Mid-April. I got hit with 2 frosts but was out the night before covering everything with plant pots, milk cartons (bottoms cut out), and sheets. Then came hail storm but everything was too big to cover by that time so many of my leaves ended up with holes in them but the plants survived :)

I just love to boil or grill it and then remove the skin, used fork to chop or it up and place some onions, fresh garlic, vinegar and it's a great salad for me..LOL!
Or I will simply fried it then with soy sauce with "kalamansi" , I will enjoy eating it already! LOL!
Anyway those are just simple recipe from my Country![/i]

I bought an eggplant the other day after visiting a Greek place and having some moussaka. I am planning on making it sometime in the next few days. Here is the recipe I am using. I of course need to scale it down a little bit otherwise it will make too much.

I don't care too much for egg plant. It is one of the few veggies I avoid. But my grandmother used to make egg plant parmesan. You might find you like it prepared that way.
* 3 eggplant, peeled and thinly sliced
* 2 eggs, beaten
* 4 cups Italian seasoned bread crumbs
* 6 cups spaghetti sauce, divided
* 1 (16 ounce) package mozzarella cheese, shredded and divided
* 1/2 cup grated Parmesan cheese, divided
* 1/2 teaspoon dried basil
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
3. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
4. Bake in preheated oven for 35 minutes, or until golden brown.

One of the ways I prepare it is to cut it into bite size chunks and toss it and some other veggies (tomatoes, onions, peppers, etc.) into an olive oiled oven safe dish, cover in sauce and put the concoction in the oven for a bit.
I serve this over a bed of whole wheat pasta (usually rotini).
