Vegan mexican recipes? Anyone knnow any great ones?

Mexican food is touch when you are vegan. Basic bean burritos are great but I am looking for some enchalada recipes or taco's or anything that does NOT include fake meat products. I just can't stand them. My body rejects all except Bocas Vegan...lol. I knnow i am a pain in the butt! If you have suggestions please share! I love to cook but I rarely get to make myself anything meal like anymore.

I'll look into it. Being Vegan is a lot different then be a vegetarian though. No dairy of any kind. No animal products of any kind. It's a purer kind of eating although there are some great alternatives to Mayo and cream cheese and stuff! Thanks again!!

One thing we do is take finely shredded carrots and sautee them lightly. We mix in chili powder and a bit of cayenne, tomato bouillon, herbs, a squirt of lime, and then give it a shot of tequila and flambe it all. It's great mixed with beans and guacomole all wrapped up in a tortilla. Yum!
