I have driven the Ice Cream Truck for the past 6 years as a independent contractor. I have rented the truck on a daily basis. So I am thinking that this is a job that I really Love. I would like to get my own truck. Maybe even a few trucks.
How should I go about getting my Ice Cream Business started?

First of all I would talk to an attorney. Next would be a call to the small business administration to find out any details that need to be worked out in advance. Might want to contact your car insurance carrier also to find out the cost of any additional coverage for the truck. I wouldn't know where else to turn since I am not a business owner.
Good luck and much success if you decide to start your own business,

You mean I can't just drive my Ice cream Truck around without all the extra hassles?

First of all Kudos on finding a job you love to do. I'm still looking for that dream job myself. What everyone has said so far is good advice. You can often get a DBA license at your local municipal office pretty cheap and if you are going to be the sole owner of the business you don't really need to incorporate right off. When you get arround to it you'll want to set up an LLC since it costs less money to set up and still provides the same protections as an S corp.
As far as the actual, business aspects are concerned, open a business bank account somewhere. Find a bank that actually pays interest on a business checking is the best bet and start putting away some cash for start up capital. Most venture capital folks or banks you will approach for loans will want to see that you will be making a direct stake in the business from it's inception. Once you have, say, half the cost of your first truck in the bank, see about getting a small business loan to buy that truck. Typically, even with bad credit if you have 50% to put down on a vehicle you'll be able to get a loan for the rest.
Once you have your truck, you'll want to look into inexpensive product that is still of acceptable quailty to maximize your profits and find routes that have lots of kids that have pocket money and only do the route at the right times when the kids are apt to buy.
Good Luck.

The very first ting you would need to do is pick a name that you like and go down to the court house in your area and get a business license. I would do that before buying a truck or anything else. Since you will be serving prepackaged food that type of license should not be too expensive. Here it is $25 per year. If you are going to be scooping the ice cream it will cost a little more.
