Peanut Butter Cookies

Does anyone have an interesting recipe on the classic peanut butter cookie? My husband is a peanut butter lover, and I'm bored with making plain old cookies for him. Last time I made them, I actually poured the batter into a mini muffin pan. It was pretty cool, b/c the middles caved in, and it was a great place to put a scoop of vanilla ice cream! This went over really well with the hub! Share your tips with me, please!

i'll have to try your version with vanilla ice cream !
the classic on the jif jar (though my mother only made the one on
the skippy jar) is:
3/4 c jiff
1/2 c. crisco
1-1/4 brown sugar
1 T milk
1 T vanilla
1 egg
1-3/4 flour
3/4 t. salt
3/4 t baking soda.
combine peanut butter, crisco, sugar, milk and vanilla.
beat med speed
add egg, beat just until blended.
combine flour, salt and baking soda.
add to creamed mixture at low speed, just until blended.
variations:
put a hershey kiss on cookie when removed from oven.
mix in mini chocolate chips.
put a reese's chip on top.
put an m&m on top.
mix cocoa in the batter for chocolate, peanut butter cookies.
heat oven 375. for 7-08 minutes. cook on sheet 2 minutes.

Try adding raisins and chocolate chips to your standard recipe.

I sometimes make chocolate chip cookies - following the recipe on the back of the chocolate chip bag... but then I add peanut butter to it. I don't really have an exact amount... I just kind of put in what I think is a good amount. It comes out really really yummy.

I've been buying the peanut butter cookie mix in the pouch and making it according to the directions and then spreading it in a square baking pan and baking it. When they are done I spread melted chocolate chips over the top. Sometimes I add a spoonful or two of melted peanut butter to the chocolate to make a real peanut butter treat. My family goes crazy for these and they are easier to make then cookies.
