When I lived in Texas, the girls I worked with talked all the time about making chicken pot pies from scratch. I kept thinking, good grief, all that work..just get some on sale from Banquet!
Well, many years later, and I do mean many years, for some odd and yet to be determined reason, I suddenly decided to try it. yes, make a chicken pot pie from scratch. I did like they said and added a few things of my own and lord have mercy, it was the best thing I had ever tasted!
I use a store bought pie crusts but you can make them yourself. THe whole recipe is in my blog CoffeeBreakWhatever Cooking Corner (link in my profile) if you care to get details.
I had always done things from scratch and didn't even have a microwave until about 1988 (when one was given to me by my MIL and only cuase she bought it, and it was to big for her trailer and she didn't have her receipt so she couldnt' take it back and her other DIL didn't want it!) But I'd make these pot pies - 2 at a time and freeze one. I also made things like Burittos, 2 dozen at a time and freeze them. But I digress from the topice -
Now, on my own, I don't make them from scratch as I can't eat all that before it goes bad/stale. So I have found Marie Calender's are the absolute best frozen chicken pot pies. Not the ones with brocoli or extra cheese or turkey...just plain old chicken pot pie... Those are the best! My 2,1/2 year old grand daughter loves the carrots and peas - she wont' eat either any other way... but from that pot pie she devours and asks for more!!!

I made a really really good one. I got the recipe from a box of Bisquick. Ingredients 1 bag frozen mixed veges thawed,drained or use fresh; 1 cup cooked chicken diced; 1 can cream of chicken soup; 1 cup Bisquick; 1/2 cup milk; 1 egg. Heat the oven to 400. Mix veges chicken and soup in ungreased casserole dish. Stir remaining ingredients in a bowl until blended. Pour over chicken mixture. Bake 30 min or until crust is golden.
My husband doesn't like chicken pot pie but really liked this and it was really easy to make! I didn't dice the chicken too small so it was rather hearty. I used broccoli, sliced carrots, corn, and peas.

My grandmother has one, she have a lot of recipes that she will not give away to my mother and me. My grandmother is a wonder cook. My mother and I cannot cook any where near as well as she can cook.
