date and walnut cookies - vegetarian recipe

Can anybody help me out in finding a vegetarian recipe for dates and walnut cookies ? I also need complete details of how to bake it. I tried salty cookies few days back they turned out harder than stone. Was extremely disappointed. So pls if any body has tried and tested recipes do mention P.S. I dont eat eggs. Hence I need an eggless recipe
