Quick, easy meals?

Hey everyone, I was wondering what everybody did to make quick easy meals, besides the standard pb&j or pasta and sauce. One of the easiest things I make is a vegetable pot pie. I'll write out the recipe below. You can also add chicken to make chicken pot pie.
You will need:
2 pie crusts, frozen or refrigerated
1 can veg-all or mixed veggies
1 can cream of potato soup (you can also use cream of chicken)
A pinch of dill
Drain the can of veg all and retain about 30% juice. Mix in bowl with cream of potato soup and dill. Pour mixture into pie crust, and bake at 350 degrees for about 45 minutes.
This is quick and easy and the ingredients are inexpensive. I hope it helps someone!

I like to make this sweet potato and sprouts pita sandwich thing.Here's the recipe, sometimes I do without the cheese and/or hummus...
Pita
Sweet Potato
whatever cooking oil you prefer
Sprouts
Soy Sauce
Sliced Cheese
Hummus
Pre-Heat the oven at about 375
Cut the sweet potato into circles,thicker ones will take longer to cook.
cover them in the oil (i use olive and I add salt and pepper)
Place on baking tray and cook for 35-45 mins
25 mins or so into cooking the sweet potatoes
Use frying pan
add oil (i use sesame)
add sprouts and soy sauce (the sprouts get way smaller and too much soy sauce will leak in the sandwich)
I add basil and oregano while cooking
After the potato and sprouts are done
spread hummus onto the inside of the split pita, add cheese,potato and sprouts.
The ingredients were not too expensive and things like sliced cheese, herbs and oil may be around already.

I have a couple of pie crusts in my refrigerator, so I might have to try your recipe. It sounds pretty good.
One easy, fairly quick recipe that I do sometimes is a rice dish. I start with a basic rice recipe, but substitute milk for about a third of the water that is called for. I add a couple tablespoons of butter and some chicken bouillon and herbs- basil, sage, parsley, and coriander are all pretty good, but it depends on what I have on hand. Then I fully cook the rice in this mixture. Once the rice is cooked, I add vegetables. Broccoli is my favorite to add but other veggies work well too. Then I grate some cheese into the mixture. Cheddar is always a good bet, but I've also used swiss, gouda, and parmesan. It makes a nice, thick, creamy rice dish that is really filling. You can serve it alongside a meat dish, or chop meat into it. Super cheap, super tasty!
