I know I am asking too late for now on what are the food you prepare for Dinner because it is already 12:00 midnight but I still do prepare a food in which I called it a dinner for people who are doing fast during the Ramadan time and my wife make a Chicken Kare-Kare in which I asked her to make the preparation without an oil and yes she did it and it is so delicious, What she do is soak the chicken with the lemon juice and a little bit of salt and then simmer it when cooking, then she add the potato, carrots with chili pepper and the mixture of Mama Sita's kare-kare and add with peanut butter... What about you Guys and to all of the MyLotter what did u prepare for your Dinner tonight...////?//

Well our dinner time was a long time ago now, I always call it tea time. We had chicken and vegetable pie, roast potatoes, mashed potatoes, sweetcorn and gravy. It was very nice as I had managed to get the roast potatoes nice and crispy the way that I like them!

To make roast potatoes, first take your potatoes and peel the skin off of them. Bring a pan of slightly salted water to the boil and add the chunks of potatoes, bring the water back to the boil and then simmer until the potatoes are just slightly soft.
Drain the water from the potatoes and then shake the potatoes in the pan causing the potatoes to become slightly fluffy. In a roasting tin put some oil and then add the potatoes and then put in the oven and cook until golden brown and crispy!

it is only midnight in your part of the world, right now it is 8:17 pm in mine and I haven't made any supper yet, I have no idea what I will make either. Probably italian sausages with french fries because basically that is all I really have in the house at this time.

Lasagna. I add a couple of things to it, which is too much to list. But the family loves it. I just wish it wouldn't take so long to make it or we would have it more often. Good that they don't know that some healthy stuff is in there, too;)

chicken kare kare? hmm. I have never tasted one, my hubby loves kare kare but we use beef. I might just try it. As for our dinner I prepare fried fish pre soaked in vinegar and garlic then I cook beef stripes with kikoman and freshly ground pepper. and prepare some soup. not a typical dinner for us.

I made italian sausages this afternoon. Then I cooked peppers and onions and tomatos in a large pan for a while and added the sausages to the tomato and pepper mixture and I have been cooking it all day. It smells soo good!

Hi Iyah! I dont know what I will cook for dinner today i.e. 1/10/08. I prefer Sambhar and rice i think or with dal. now we dont eat non-veg as our navrathri festival started for 10 days till 9th of this month i.e. Dessara. This year I am not celebrating any of the festivals as my beloved husband has passed away on May 29th 08. still we dont eat non veg. I could not make out what is Mama Sita's Kare-Kare. Last night I had to do a it of quick thinking. My husband was on the ambulance and I try to eat as a family. There were a few things that I needed from the store that he was going to pick up for me. But alass, he had a call right before his shift was over and that would make dinner at 8 and that is bed time for a couple of my children so I went with hamberger helper. He still went to the store for me and picked up a roast for tonight. I have it in the crock pot and it will be done for dinner tonight.

I don't prepare food when its already late but i do prepare them when there is an occasion the next day. But for dinner, i cooked vegtables and fried fish. Your recipe of chicken kare-kare is interesting. I will try that out next time. My kids like kare-kare. Do you eat yours with shrimp paste? I will cook chicken curry tonight so it would be special, too. Thanks for sharing that recipe. I will get back to you if i will make mine a success!

Hello iyah10,
I am the only one who cooks at home and it is only for myself, hubby and 2 year old son. I seldom cook too much especially this Ramadhan month. Normally whatever I cook or buy for breaking fast, I will keep a bit for sahur. My husband doesn't like to eat too much for sahur and so, it a simple menu will do for the two of us.
