Here's the recipe
2 teaspoons veg oil
1 onion chopped finely
12ozs carrots chopped
8oz Bramley apples (i use any green apples, cheaper) peeled, cored and chopped
1/2 teaspoon ginger (opitional but I always put 1 teaspoon in)
1 1/2 pints water or veg stock
2 teaspoons corn flour
salt and freshy ground black pepper (I don't bother)
Heat the oil in a large saucepan, add the onion, carrots, apple and ginger. Cover and cook gently, shaking the pan occasionally, for twn mins
Blend a couple of tablespoons of stock with the corn flour. Add the reamianing stock to the pan, cover and simmer for a further 15 mins.
Stir in the corn flour and cook for 5 mins or until the soup thickens slightly.
Transfer the soup to a liquidiser or food processor and blend until smooth
Return to to the saucepan.
Season to taste with salt and pepper, reheat gently for 3 to 4 mins.
Serve in warm soup bowls
Hope you enjoy

Here's a wonderful soup recipe:
Tortillia (or taco) Soup
Fry up a pound of hamb., and a med. onion, and if you like celery, you can add a cup of it cut up. As the meat is cooking, add: a pkg. of dry ranch dressing mix, and a pkg. of taco seasoning, salt, pepper, a little garlic powder, and some chile powder ( if you like it spicey: a Tablsp. - if not a teasp)
As the above is browing - get the following ready to add: a can of brown beans, a can of corn (drained), 3 cans of diced or crushed tomatoes, and 3 cans of water.
When the meat mixture is browned to your liking, add the other ingredients, stirring well.
You can either simmer it on the stove on a low burner, or put it in a crock pot for a couple of hours. On the stove, you only need to heat it through for about 30-45 minutes.
Serve with Doritos and shredded cheese if you like. Yum - yum

I forgot to ask - has anyone ever heard of 'spinach or cream of spinach' soup? Sounds healthy.
Also - I have tasted "cream of pumpkin soup" too, and it's kind of nice for a change.

I never make homemade soup so I love going to my daughter's house for dinner. She loves cooking and she always makes her own soups. My favourites are chicken and mushroom soup, celery soup, and lentil and green pea soup. I am afraid my limited culinary skills go about just as far as using a can opener.

Hello Anne18
Carrot and apple sounds awful but they do actually compliment each other very well as does carrot and orange. My boys like to drink fresh carrot juice whenever I make it!
