I decided this year to save my pumpkin seeds so I can plant next year now Iam wondering how I should do that should I let them dry out in a plastic bag should I seal it or will they mold if I seal it.
Also when is the best time to plant them and how many seeds from a pumpkin should I use

Pumpkin seeds, what a mess. You should remove as much of the pumpkin as possible. It could mold. Let them dry on a towel, paper towel, newspaper or a brown paper shopping bag. Once they are dry you should store them in a cool dark place.
Depending on where you live, it is possible to plant them now. Where I live I throw the pumpkins from Halloween onto the compost pile and pumpkin plants grow back. But it is too cold here to get fruit because the soil doesn't heat up soon enough to get a crop from volunteers.

Space is the most important element. Pumpkin vines will get very big.
